feat(blog): 新增 AI 分类目录与中文展示名

- collections 中 BLOG_CATEGORY_LABEL_ZH 增加 ai ->「AI」 - 新增 docs/blog/ai/（.gitkeep 占位，文章以 .md 放入此目录）已通过 npm run docs:verify Made-with: Cursor
